Description
A hearty and simple casserole inspired by Dolly Parton’s Southern kitchen—made with just ground beef, potatoes, tomatoes, and onions. Comfort food at its best!
Ingredients
- 1 lb ground beef
- 4–5 medium potatoes, peeled and thinly sliced
- 1 can (14.5 oz) diced tomatoes (undrained)
- 1 medium onion, chopped
- Salt and pepper, to taste
Optional:
- A few sliced carrots
- Cheddar cheese, shredded (for topping)
Instructions
- 1.Preheat oven to 350°F (175°C).
- 2.In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat if needed.
- 3.In a greased 9×13″ casserole dish, layer the ingredients:
- -A layer of sliced potatoes
- -Some of the chopped onions
- -A portion of the ground beef
- -Spoon over some diced tomatoes (with juices)
- -Repeat layers as needed
- 4.Season each layer with salt and pepper as you go.
- 5.Cover with foil and bake for about 1 hour, or until potatoes are fork-tender.
- 6.If you’d like a crispy top, uncover for the last 10–15 minutes of baking.
Notes
This casserole is incredibly versatile feel free to swap in ground turkey or add extra veggies like zucchini or bell peppers. For a crispy topping, broil the cheese for 2–3 minutes at the end. Leftovers reheat beautifully, making it a perfect make-ahead meal for busy weeknights.
