For the Beef:

  • 1 lb (450g) beef sirloin, thinly sliced

  • 1 tbsp olive oil

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp smoked paprika (optional)

For the Garlic Parmesan Sauce:

  • 2 tbsp unsalted butter

  • 4 cloves garlic, minced

  • 2 tbsp all-purpose flour

  • 2 cups whole milk

  • 1/2 cup heavy cream

  • 3/4 cup grated Parmesan cheese (freshly grated preferred)

  • Salt and pepper to taste

For the Pasta:

  • 12 oz rotini pasta

  • Salted water for boiling

Optional Garnish:

  • Chopped parsley

  • Extra Parmesan cheese

  • Crushed red pepper flakes


Instructions

  1. Cook the rotini: Bring salted water to a boil and cook rotini until al dente. Drain, reserving 1/2 cup pasta water. Set aside.

  2. Sear the beef: Heat olive oil in a skillet over medium-high. Add beef slices, season with salt, pepper, and paprika. Sear for 2–3 minutes per side until browned. Set aside.

  3. Make the sauce: In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant. Stir in flour and whisk to form a roux. Gradually whisk in milk and cream. Simmer until thickened.

  4. Add cheese: Stir in grated Parmesan until smooth. Season with salt and pepper. Adjust consistency with reserved pasta water if needed.

  5. Combine: Add rotini and beef to the sauce. Toss to coat and heat through.

  6. Serve: Garnish with parsley, extra cheese, and red pepper flakes if desired.

Notes

  • Substitute chicken or mushrooms for a different protein option.

  • Add spinach, mushrooms, or sun-dried tomatoes for more texture.
