Ingredients
For the Beef:

1 lb (450g) beef sirloin, thinly sliced

1 tbsp olive oil

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp smoked paprika (optional)
For the Garlic Parmesan Sauce:

2 tbsp unsalted butter

4 cloves garlic, minced

2 tbsp all-purpose flour

2 cups whole milk

1/2 cup heavy cream

3/4 cup grated Parmesan cheese (freshly grated preferred)

Salt and pepper to taste
For the Pasta:

12 oz rotini pasta

Salted water for boiling
Optional Garnish:

Chopped parsley

Extra Parmesan cheese

Crushed red pepper flakes
Instructions

Cook the rotini: Bring salted water to a boil and cook rotini until al dente. Drain, reserving 1/2 cup pasta water. Set aside.

Sear the beef: Heat olive oil in a skillet over medium-high. Add beef slices, season with salt, pepper, and paprika. Sear for 2–3 minutes per side until browned. Set aside.

Make the sauce: In the same skillet, melt butter over medium heat. Add minced garlic and cook until fragrant. Stir in flour and whisk to form a roux. Gradually whisk in milk and cream. Simmer until thickened.

Add cheese: Stir in grated Parmesan until smooth. Season with salt and pepper. Adjust consistency with reserved pasta water if needed.

Combine: Add rotini and beef to the sauce. Toss to coat and heat through.

Serve: Garnish with parsley, extra cheese, and red pepper flakes if desired.
