- Season the Chicken: Pat the chicken pieces dry with paper towels. Mix together salt, pepper, paprika, garlic powder, and thyme. Rub this seasoning mixture all over the chicken.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Place the chicken skin-side down and sear for 5-7 minutes until the skin is crisp and golden. Flip and sear the other side for 3-4 minutes.
- Cook Through: Reduce the heat to medium-low. Cover the skillet and cook the chicken for an additional 20-25 minutes, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and set aside.
- Prepare the Gravy: In the same skillet, retain about 2 tablespoons of the pan drippings. Add flour and whisk continuously for about 2 minutes to create a golden roux. Gradually pour in the chicken broth, whisking to prevent lumps. Let it simmer for 3-5 minutes until it thickens, then stir in the milk or cream. Season with salt and pepper to taste.
- Combine and Serve: Return the chicken to the skillet, spoon some gravy over the top, and let it warm together for 2-3 minutes. Serve hot over mashed potatoes, rice, or biscuits.
