Ingredients
For the Chicken:
-
4 bone-in, skin-on chicken thighs (breasts or drumsticks can also be used)
-
2 tablespoons olive oil or unsalted butter
-
1 teaspoon salt
-
½ teaspoon black pepper
-
½ teaspoon smoked paprika
-
½ teaspoon garlic powder
-
¼ teaspoon dried thyme (optional)
For the Gravy:
-
2 tablespoons pan drippings (or unsalted butter)
-
2 tablespoons all-purpose flour
-
1½ cups chicken broth (preferably low sodium)
-
½ cup milk or heavy cream (adjust based on desired richness)
-
Salt and pepper to taste
Instructions
-
Season the Chicken: Pat the chicken pieces dry with paper towels. Mix together salt, pepper, paprika, garlic powder, and thyme. Rub this seasoning mixture all over the chicken.
-
Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Place the chicken skin-side down and sear for 5-7 minutes until the skin is crisp and golden. Flip and sear the other side for 3-4 minutes.
-
Cook Through: Reduce the heat to medium-low. Cover the skillet and cook the chicken for an additional 20-25 minutes, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and set aside.
-
Prepare the Gravy: In the same skillet, retain about 2 tablespoons of the pan drippings. Add flour and whisk continuously for about 2 minutes to create a golden roux. Gradually pour in the chicken broth, whisking to prevent lumps. Let it simmer for 3-5 minutes until it thickens, then stir in the milk or cream. Season with salt and pepper to taste.
-
Combine and Serve: Return the chicken to the skillet, spoon some gravy over the top, and let it warm together for 2-3 minutes. Serve hot over mashed potatoes, rice, or biscuits.
Notes
-
Boneless Option: For a quicker version, use boneless, skinless chicken thighs and reduce the cooking time by 10 minutes.
-
Herb Enhancement: Add a bay leaf or fresh thyme to the gravy while simmering for added flavor.
-
Spicy Variation: Incorporate a pinch of cayenne pepper into the gravy for a subtle heat.
