BBQ Sauce:

Instructions
Step 1: Marinate the Chicken
-
In a bowl, mix the buttermilk, salt, pepper, paprika, and garlic powder.
-
Add the chicken chunks, coating them well.
-
Cover and refrigerate for at least 30 minutes (up to overnight for maximum flavor).
Step 2: Prepare the Coating
-
In a separate bowl, combine the flour, cornstarch, baking powder, paprika, cayenne, salt, and pepper.
-
Remove chicken from marinade, letting excess drip off.
-
Toss each piece in the dry coating until well-covered. Let rest on a rack for 10 minutes to help the coating stick.
Step 3: Cook the Chicken
Frying Method:
-
Heat oil to 350°F (175°C) in a deep skillet.
-
Fry chicken in batches for 4–5 minutes or until golden brown and cooked through.
-
Drain on paper towels or a wire rack.
Oven-Baked Method:
-
Preheat oven to 425°F (220°C).
-
Place coated chicken on a wire rack over a baking sheet.
-
Lightly spray with cooking oil.
-
Bake for 20–25 minutes, flipping halfway through, until crispy and golden.
Air Fryer Method:
-
Preheat air fryer to 400°F (200°C).
-
Place chicken pieces in a single layer, spray with oil.
-
Air fry for 12–15 minutes, flipping once halfway.
Step 4: Sauce It Up!
-
While the chicken is cooking, prepare your sauce of choice in a small saucepan.
-
Once chicken is done, toss in the warm sauce or serve it on the side for dipping.
Notes
-
You can double-dip the chicken in flour for extra crunch.
-
Bake or air fry for a lighter version.
-
Store leftovers in the fridge for 3 days, or freeze for up to 1 month.
