For the Chicken:

  • 1 lb (450g) boneless, skinless chicken breasts, cut into 1.5-inch chunks

  • 1 cup buttermilk (or substitute with milk + lemon juice)

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp paprika

  • 1/2 tsp garlic powder

For the Coating:

  • 1 cup all-purpose flour

  • 1/2 cup cornstarch

  • 1 tsp baking powder

  • 1 tsp paprika

  • 1/2 tsp cayenne pepper (optional for heat)

  • Salt & pepper to taste

  • Oil for frying (or baking instructions below)

Sauce Options (Choose One):

Buffalo Sauce:

  • 1/2 cup hot sauce (like Frank’s RedHot)

  • 1/4 cup unsalted butter

  • 1 tbsp white vinegar

  • 1/2 tsp garlic powder

Honey Garlic Sauce:

  • 1/4 cup honey

  • 2 tbsp soy sauce

  • 2 cloves garlic, minced

  • 1 tbsp water

  • 1 tsp cornstarch (slurry with water)

BBQ Sauce:

  • 1/2 cup your favorite BBQ sauce

  • 1 tbsp brown sugar

  • 1 tsp smoked paprika


Instructions

Step 1: Marinate the Chicken

  1. In a bowl, mix the buttermilk, salt, pepper, paprika, and garlic powder.

  2. Add the chicken chunks, coating them well.

  3. Cover and refrigerate for at least 30 minutes (up to overnight for maximum flavor).

Step 2: Prepare the Coating

  1. In a separate bowl, combine the flour, cornstarch, baking powder, paprika, cayenne, salt, and pepper.

  2. Remove chicken from marinade, letting excess drip off.

  3. Toss each piece in the dry coating until well-covered. Let rest on a rack for 10 minutes to help the coating stick.

Step 3: Cook the Chicken

Frying Method:

  • Heat oil to 350°F (175°C) in a deep skillet.

  • Fry chicken in batches for 4–5 minutes or until golden brown and cooked through.

  • Drain on paper towels or a wire rack.

Oven-Baked Method:

  • Preheat oven to 425°F (220°C).

  • Place coated chicken on a wire rack over a baking sheet.

  • Lightly spray with cooking oil.

  • Bake for 20–25 minutes, flipping halfway through, until crispy and golden.

Air Fryer Method:

  • Preheat air fryer to 400°F (200°C).

  • Place chicken pieces in a single layer, spray with oil.

  • Air fry for 12–15 minutes, flipping once halfway.

Step 4: Sauce It Up!

 

  1. While the chicken is cooking, prepare your sauce of choice in a small saucepan.

  2. Once chicken is done, toss in the warm sauce or serve it on the side for dipping.

Notes

  • You can double-dip the chicken in flour for extra crunch.

  • Bake or air fry for a lighter version.

 

  • Store leftovers in the fridge for 3 days, or freeze for up to 1 month.
