- 1 pound boneless, skinless chicken breasts, diced
- 2 cloves garlic, minced
- 3 cups low-sodium chicken broth
- 1 cup buffalo wing sauce (adjust to taste)
- 1 packet of ranch seasoning mix
- 8 ounces of penne pasta
- 4 ounces cream cheese, softened
- 1½ cups shredded cheddar cheese
- Salt and freshly ground pepper, to taste
- Optional garnish: chopped green onions, fresh parsley, crumbled blue cheese
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and fully cooked, about 5-6 minutes. Stir in garlic and cook for an additional minute.
- Stir in chicken broth, buffalo sauce, ranch seasoning, and penne pasta, mixing well.
- Bring the mixture to a boil, then reduce heat, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
- Add cream cheese, stirring until completely melted and creamy. Stir in shredded cheddar cheese until melted and smooth.
- Taste and adjust seasonings if needed. Serve garnished with chopped green onions, parsley, or crumbled blue cheese.
