  • 8 ounces of penne pasta
  • 4 ounces cream cheese, softened
  • 1½ cups shredded cheddar cheese
  • Salt and freshly ground pepper, to taste
  • Optional garnish: chopped green onions, fresh parsley, crumbled blue cheese


Instructions

  • Heat olive oil in a large skillet or Dutch oven over medium heat. Add diced chicken, season with salt and pepper, and cook until browned and fully cooked, about 5-6 minutes. Stir in garlic and cook for an additional minute.
  • Stir in chicken broth, buffalo sauce, ranch seasoning, and penne pasta, mixing well.
  • Bring the mixture to a boil, then reduce heat, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
  • Add cream cheese, stirring until completely melted and creamy. Stir in shredded cheddar cheese until melted and smooth.
