  • 2 cups all-purpose flour

  • 1 ½ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1 cup granulated sugar

  • ½ cup unsalted butter, softened

  • 3 large eggs

  • 1 tsp vanilla extract

  • 1 cup crushed pineapple (with juice)

  • 1 cup shredded sweetened coconut

  • ½ cup chopped pecans (optional)

For the Caramel Glaze:

  • 1 cup brown sugar

  • ½ cup unsalted butter

  • ¼ cup whole milk

  • Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

  3. In a large bowl, cream together butter and sugar until light and fluffy.

  4. Beat in eggs one at a time, then stir in vanilla extract.

  5. Add crushed pineapple with juice and shredded coconut. Mix well.

  6. Gradually add dry ingredients into the wet mixture, mixing until just combined.

  7. Fold in chopped pecans if using.

  8. Pour batter into prepared pan and smooth the top.

  9. Bake for 35–40 minutes or until a toothpick inserted comes out clean.

  10. Meanwhile, make the glaze: In a small saucepan, combine brown sugar, butter, milk, and a pinch of salt. Bring to a gentle boil over medium heat and simmer for 3–4 minutes while stirring.

  11. Remove cake from oven and let cool slightly.

  12. Pour warm caramel glaze evenly over the cake. Let it soak in for at least 30 minutes before slicing and serving.

Notes

  • For an extra coconut kick, sprinkle toasted coconut on top after glazing.

  • You can use gluten-free flour and plant-based milk to make this recipe allergy-friendly.
