- 2 cups all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup crushed pineapple (with juice)
- 1 cup shredded sweetened coconut
- ½ cup chopped pecans (optional)
- For the Caramel Glaze:
- 1 cup brown sugar
- ½ cup unsalted butter
- ¼ cup whole milk
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Add crushed pineapple with juice and shredded coconut. Mix well.
- Gradually add dry ingredients into the wet mixture, mixing until just combined.
- Fold in chopped pecans if using.
- Pour batter into prepared pan and smooth the top.
- Bake for 35–40 minutes or until a toothpick inserted comes out clean.
- Meanwhile, make the glaze: In a small saucepan, combine brown sugar, butter, milk, and a pinch of salt. Bring to a gentle boil over medium heat and simmer for 3–4 minutes while stirring.
- Remove cake from oven and let cool slightly.
- Pour warm caramel glaze evenly over the cake. Let it soak in for at least 30 minutes before slicing and serving.
Notes
- For an extra coconut kick, sprinkle toasted coconut on top after glazing.
- You can use gluten-free flour and plant-based milk to make this recipe allergy-friendly.
- Cake tastes even better the next day after the glaze fully absorbs.
