Ingredients

For the Potato Pancakes:
4 cups shredded potatoes (Russet or Yukon Gold), squeezed dry
1/2 small onion, finely grated
2 eggs
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh chives or parsley, chopped
1/4 teaspoon garlic powder (optional)
2–3 tablespoons vegetable oil, for frying

For the Beef and Cheese Filling:
1/2 lb ground beef
1/2 teaspoon paprika
1/2 teaspoon onion powder
Salt and pepper to taste
1 cup shredded mozzarella or cheddar cheese


Instructions

In a skillet over medium heat, cook ground beef with paprika, onion powder, salt, and pepper until browned. Drain any excess fat and set aside.

In a large bowl, mix shredded potatoes, onion, eggs, flour, salt, pepper, herbs, and garlic powder until well combined.

Heat oil in a non-stick skillet over medium heat. Scoop 1/4 cup of potato mixture and press it into a flat pancake in the skillet.

Cook for 2–3 minutes until lightly golden. Add a spoonful of cooked beef and shredded cheese on top, then cover with another scoop of potato mixture, flattening slightly to seal the filling inside.

Cook for another 3–4 minutes per side, or until golden brown and crisp, and cheese is melted.

Transfer to paper towels to drain. Repeat with remaining mixture.
Garnish with chopped chives or parsley and serve hot.

Notes

  • Serve with sour cream, hot sauce, or a drizzle of garlic aioli.

  • These can be frozen and reheated for a quick meal later.
